A sweet pie with an apple, cinnamon, sugar and rosewater filling.
Name - Recipe
Μηλόπιτα.
For the dough:
2 cups of flour
2 teaspoons of b.p.
½ glass of peanut oil
¾ cup of icing sugar
3 egg yolks
¼ glass of fresh milk
1 vanilla pod
1 cup of cognac
For the filling:
1 kg of apples, peeled, cored and sliced.
3 - 4 tbsp sugar
Cinnamon
A bit of rose water
Icing sugar for dusting
Filling: In a saucepan, add the apples, cinnamon, sugar and rosewater. Place them on the heat to reduce the juice from the apples.
Dough: In a bowl, add the 3 egg yolks and beat them well with the vanilla. Add the icing sugar, peanut oil, flour, b.p., cognac and milk. Knead it well until the dough is moderately firm. Divide it, put half of it in the freezer for 30 minutes to firm up, and spread the other half in a rectangular pie plate. Place the baked apples on top of the dough inside the pie plate. Remove the dough from the freezer after half the time has elapsed and use a coarse grater to grate the dough over the apples. Then bake the apple pie in the oven for 40 minutes at 160°C. When it is golden brown, remove it and sprinkle with icing sugar. (Sotira Eleftheriou, 45 years old, Kyperounda)
