Thrushes in tomato sauce

Mezé for hunters. The thrushes are lightly fried and cooked in wine and tomato juice or grated fresh tomatoes.

Tiganítes with honey and dried fruit

Pancakes get a local character in this recipe since the filling is made of pure Cypriot ingredients: dried figs, raisins, honey, carob syrup and almonds.

Titsirópittes

These are pittes (bread) with titsirides, i.e. fried pieces of pork fat.

Tomato juice

Tomato juice is preserved by adding salt, stored in sterile glass bottles and kept in a dark and cool place for use throughout the year.

Recipe for homemade, preservative-free ketchup. Store in jars in a dark and cool place.

Tourlou tourlou

A summer dish that combines a variety of vegetables with a very tasty outcome. The ingredients are sautéed and then cooked in water. A recipe from Karavas.

Tremithopittes - Pittas with terebinth seeds

These thin pittas are crispy like rusks. In addition to tremithia (terebinth seeds), they may also contain raisins.

Trin-Galotrin
