Ingredients

1 kg ripe tomatoes
3 eggs
40ml olive oil

Method

Version A 
Wash the tomatoes and grate them. Remove the skin and add the juice to the pan. Add the oil and let the mixture boil briefly. Add the eggs. let them cook for a minute or two, mix them and serve. (Kyperounda, Kourri and Lazarou 2007)

Version B 
Peel ripe tomatoes and chop them finely. Put them in a pan with a little oil and leave them for 5-6 minutes over a low heat. Then add the beaten eggs, stir to combine and serve. (MANRE 2006)
