Slices of bread fried in olive oil, sprinkled with sugar and in this variation they are accompanied by a fruit salad. Katsoures with sugar were a common delicacy during the period of the English rule as they did not cost much, hence, they were called “the poor people's sweet".

Slices of bread (better to be wood-fire baked)
1 glass of peanut oil
Sugar
For the fruit salad:
1 pear
1 apple
6 strawberries
2 oranges
2 tablespoons of sugar
For katsoures: Cut the bread into slices. In a saucepan, add the oil and after heating add the slices and fry them. Transfer them onto a plate with absorbent paper. Sprinkle them with plenty of sugar.
For the fruit salad: Juice one orange. Cut the fruit into a large bowl. Pour in the juice, add the sugar and stir. Serve in individual small bowls with katsoures on the side. (Georgia Psilogeni, Cooking Cypriot food 2013-2014)
