A recipe for a well known sweet delicacy, typical of the Middle Eastern cuisine, which is also very popular in Cyprus.

Μπακλαβάς. A syrupy sweet with buttered phyllo (filo) pastry sheets and a filling of almonds, sugar and cinnamon.

Ingredients

1 box of baklava sheets (phyllo/filo pasty sheets)
1 ½ cup unsalted butter, melted
½ kg almonds, coarsely ground
½ kg walnuts, coarsely chopped
½ glass of sugar
2 tsp ground cinnamon

For the syrup:
½ glass of sugar
½ glass of water
1 cinnamon stick
1 slice of lemon

Method

On a buttered baking dish, lay out 7 baklava sheets and brush with butter. In a bowl, add the nuts, the cinnamon and sugar and stir with a spoon. Spread the nut mixture over the baklava/phyllo sheets. Top the mixture with 7 more baklava sheets and brush with butter, and repeat this process 3 more times. Cut the baklava into diamond-shaped pieces and drizzle with a little butter. Bake the baklava in the oven at 180°C for 45 minutes. To make the syrup, boil the water and sugar in a small pot and stir at the same time. 7 minutes after the syrup has come to a boil, add the lemon and cinnamon. Remove from the heat and allow to cool. Pour the syrup over the baklava, making sure the syrup is cold and the baklava is hot. (Varvara Sarmalli, Cooking Cypriots 2012-2013)
