The dough is covered with almonds and cinnamon, rolled out and cut into pieces. After frying, the pishíes are dipped in honey syrup.

Pishíes are sweet, fried small pittas. They represent the traditional pancakes of Cyprus. In Kakopetria village they are dipped in honey syrup.

Ingredients

For the dough:
4 cups of flour
½ teaspoon salt
¼ cup olive oil
Lukewarm water

For the filling:
½ cup coarsley ground almonds
cinnamon

For the syrup:
Honey
Water
A cinnamon stick

Method

In a pot, add water, honey and a cinnamon stick and bring to a boil. Remove from heat and set aside to cool. In a bowl, add the flour, salt and olive oil and mix with your fingertips. Gradually add the water and knead to form a soft dough. Roll out the dough into a sheet on a countertop sprinkled with flour. Sprinkle with the almonds and cinnamon. Roll the dough into a roll and cut small pieces of about 3-4 cm each. Use your finger to press each round piece in the centre. In a pan, preheat the oil and fry them on high heat. While they are still hot, dip them in the syrup. Transfer to a platter and serve. (Alexandra Sapountzi, Cooking Cypriot food 2013-2014)

Comments

The cinnamon is the secret of this recipe. In the syrup, instead of honey we can use sugar. We prefer honey, however, because it makes the dessert tastier and more nutritious. (Alexandra Sapountzi, Cooking Cypriot food 2013-2014)
