Pishíes was one of the main traditional sweets served on festive occasions. In the old days, they used to prepare pishíes mostly when they had pork fat available so they could fry them.

Pishíes are sweet, fried small pittas. They represent the traditional pancakes of Cyprus.

Ingredients

½ kilo village flour 
1/3 glass sunflower oil 
1 glass lukewarm water 
¼ tsp salt 
Oil for frying
Honey
Ground cinnamon

Method

In a bowl, add the flour, salt and oil and rub them together with your hands. Add the lukewarm water and knead to make a soft dough. Roll out medium sized pishíes with a rolling pin and fry them in plenty of oil, on both sides. Serve them with honey and ground cinnamon. (Michael Angelos Tryfonos, Cooking Cypriot food 2013-2014)

In the old days, they used pork fat for frying, since they did not have sunflower oil at their disposal. Additionally, some people who did not have honey used sugar instead (Michael Angelos Tryfonos, Cooking Cypriot food 2013-2014).
