Psito - roast meat or chicken with potatoes is the most popular Cypriot dish cooked in the oven. It is particularly associated with the family Sunday lunch.

Ingredients

½ chicken skin on (about 1 kg)
6 medium-sized potatoes
1 red onion, sliced
1-2 tomatoes, sliced
1 cup olive oil
1/4 cup lemon juice
A pinch of oregano
½ cup water
Salt, black pepper
Garlic 

Method

Place the chicken in a roasting tin, pierce it and insert the garlic. Peel and wash the potatoes. Cut them in half and pierce them with a notch to cook inside as well. Season with salt and pepper and add the lemon juice, oregano, oil and water. Top with the onion and tomatoes. Bake in a preheated oven at 180°C for about 2 hours. When golden brown, turn it over and add a little water if necessary.
