Κατσίκα στο φούρνο.

Ingredients

2 kg of goat meat 
2 kg of potatoes
1 glass of vegetable oil
2 glasses of water
1-2 tomatoes
2-3 bay leaves
2-3 cinnamon sticks
1 teaspoon of salt 

Method

In a roasting tin cut the meat into pieces. Cut also the potatoes in half after peeling them. Add the bay leaf and cinnamon, oil and water. Slice the tomatoes and place them on top of the meat and potatoes. Season with salt. Cover the tin with aluminium foil and cook in the oven until done. This recipe serves 8 people. To prepare the traditional wood-fired oven, we put wood chips and light them in the oven until they turn white. Leave the charcoal in and put the roasting tin in. Close the oven with its lid and put clay made of earth and water around the lid to prevent air from entering. After 2 hours, remove the aluminium foil and leave the food for another 1.5 hours to roast. (Panagiota Savva, 65 years old from Agios Ioannis Agros)
