Ttavas is one of the most typical Cypriot oven dishes with several local variations. Lefkaritikos ttavas is made with lamb or goat meat and contains rice.
Name - Recipe
A dish with potatoes, meat, tomatoes, onion and other ingredients, baked in the oven. A recipe from the village of Lefkara in Cyprus.
Version A
1/2 kg lamb meat cut into small pieces
1½ cup of rice
4-5 tomatoes
2 sliced onions
2 sliced potatoes
1/2 cup oil
1 tsp of ground cumin
salt, pepper
water
Version B:
1 kg of goat or lamb meat with bones
2 cups of rice for pilaf
4-5 tomatoes, grated
2-3 potatoes cut into very thin slices
2-3 onions, finely chopped
2 tbsp of cumin, freshly ground
salt, pepper
tomatoes, sliced to cover the food
1 glass of olive oil
Version A
Place the meat, rice and then the onions, tomatoes and potatoes in layers in a thick clay pot. Add salt, pepper, cumin and oil. Add enough water to cover the food and close the clay pot. Bake in the oven for about 3-4 hours. (MANRE 2006, 37)
Version B
Cut the meat into pieces and season with salt. Put a layer of meat in the clay pot and all the rice on top, grate the tomato and 1 onion and sprinkle with cumin and salt. Cover the rice with the rest of the meat and add some salt, cover the whole surface with thinly sliced potatoes, sprinkle with cumin, chopped tomato and onion. Layer tomato slices on top and pour oil over the entire surface. Pour water (ratio: for 1 cup of rice 2 cups of water). Bake in a wood-fired oven for 3 hours or in a conventional oven for 15 minutes in high heat ( 250°C to 300°C) and then lower to 200°C for 3 hours.
