Ttavas is one of the most typical Cypriot oven dishes with several local variations.

A dish with potatoes, meat, tomatoes, onion and other ingredients, baked in the oven.

Ingredients

1 kg of lamb meat
1 kg of potatoes
3-4 large onions
5-6 ripe tomatoes
1/2 cup oil
cinnamon
2-3 bay leaves
1 teaspoon of cumin, lightly ground
salt, pepper

Method

Cut the meat into chunks. Peel and cut the potatoes in quarters. Peel and slice the onions. Slice the tomatoes. In a clay pot, place rows of meat, potatoes, onions, tomatoes. Add salt, pepper, cinnamon, bay leaf, cumin and oil. Cover with lid or aluminium foil and bake in a moderate oven for 2 hours. (MANRE 2006, 36)
