Ttavas is one of the most typical Cypriot oven dishes with several local variations. Korniotikos ttavas is baked in a clay pot, which is made in the village of Kornos.
Name - Recipe
A dish with potatoes, meat, tomatoes, onion and other ingredients, baked in the oven. A recipe from the village of Kornos in Cyprus.
1 kg of diced goat
5-6 diced potatoes
3-4 artichokes in halves
2 zucchini in quarters
4 onions cut into slices
1 small cup of rice
1 cup of tomato juice
4 tsp of ground cumin
2-3 bay leaves
Olive oil
2 cups of water
Salt, pepper
In a clay pot made in Kornos village, add some olive oil and then add the onions, potatoes, zucchini, artichokes, meat, tomato juice and water, bay leaves, cumin, salt, pepper and some more oil. Top with rice and mix well. Add some more water and place in a wood-fired oven or in a conventional oven covered with aluminium foil for 3 hours at 180°C. (Theognosia Andreou, Kornos)
