Chicken with lountza and kaskavali cheese

A family recipe of the recent years that was mainly prepared on festive occasions. It comes from Chandria in the area of Pitsilia (mountainous district of Limassol).

Ingredients

2 chicken fillets
200 g smoked lountza 
200 g kaskavali or other yellow cheese, grated
2 strained yoghurts
3 eggs
4 tablespoons of olive oil
A bit of nutmeg
A bit of salt
A bit of pepper

Method

Brush a baking dish with olive oil. Cut the chicken fillets into thin strips, season with salt and pepper and place them in the baking pan. Spread the lountza and the grated kaskavali on top. Beat the eggs and add the yoghurt, a pinch of salt and some nutmeg. Pour the mixture over the ingredients in the dish. Bake in a preheated oven at 200°C for about 40 minutes.
