A unique variation of ttavas with rabbit in a pot, from Kyperounda village.

A dish with rabbit and onion from the village of Kyperounda in Cyprus.

Ingredients

1 rabbit
1 kilo of onions
Wine
Salt
Oil

Method

Cut the rabbit in small pieces. In a saucepan, put some oil and add the rabbit pieces. Cover the pan to cook slowly over low heat. Stir occasionally until browned. Take the onions, peel them and divide them in half. Next, cut them into small slices and add them to the pan with the rabbit and season with salt. Stir constantly until the onions are soft. When you see that the rabbit is almost done, add 2 glasses of wine and close the pan. Stir occasionally until the wine is absorbed and then serve with potatoes and salad.
