Rabbit marinated in a wine, vinegar and herb sauce, then roasted in the oven.

Ingredients

1 rabbit
Peanut oil

For the sauce:
2 glasses red wine 
½ glass vinegar 
2 glasses water
1 onion 
1 carrot, cut into pieces 
Salt 
Pepper 
Cloves
Thyme or rosemary 
Bay leaves

Method

Boil all the ingredients for the sauce for about 45 minutes. Place the rabbit in a baking dish, pour over the sauce and allow it to soak in the sauce for two to three hours. Drain it, brush it with peanut oil, put thyme or bay leaves or rosemary around it, pour some sauce over it and roast it in a moderate oven. (Agathonas Kouppis, Kyperounda)
