A simple and very popular recipe and dish, served with olive oil, lemon juice, and accompanied with tomatoes and olives.

Ingredients

2 cups of louvi (black-eyed beans)
1 bunch of lahana (Swiss chard)
2 tbsp lemon juice
2 tbsp olive oil
Salt, pepper

Method

Clean and wash the louvi. Then place them in a pot of boiling water and boil them for 5-10 minutes. Wash and cut the lahana into large pieces. Change the water, skim off the foam and add the lahana. Boil the louvi until tender, skimming occasionally. When they are cooked, add salt and lemon juice. Serve with olive oil, lemon and salt, accompany with tomatoes and olives. (MANRE 2009, 16)
