Ingredients

Okra, preferably white 
Fresh louvi (black eyed beans) 
Onions 
Garlic (optional) 
Plenty of tomatoes 
Olive oil 
Salt 
Pepper 
Vinegar

Method

Drizzle the okra with vinegar. Sauté plenty of onion/garlic in olive oil. Add chopped or grated tomatoes, salt and pepper. When the sauce has thickened somewhat, add the louvi and then the okra (depending on how hard the louvi is). Add a bit more vinegar (optional). Cook over a very low heat. It is one of the oldest dishes that the women from Karpasia used to cook in a clay pot in the plains, where they used to keep an eye on their goats or on the tobacco plantations.
