A well-known Greek recipe, prepared with traditional and healthy ingredients of the Cypriot cuisine.

Φασόλια γίγαντες με λουκάνικα.

Ingredients

500 gr of boiled gigantes beans (butter or runner beans)
1 onion, finely chopped
4 tbsp olive oil
1 clove of garlic, finely chopped
1kg ripe tomatoes (to be juiced)
1 tsp oregano or thyme
2 bay leaves
Salt, pepper
2 tsp sugar (rounded)
Juice of ½ lemon
1 tsp spearmint
parsley, chopped 
Sausages, sliced

Method

Sauté the garlic and onion in olive oil until they turn golden. Add the tomato juice, all the herbs and spices, lemon juice and sugar and let them simmer. In a baking pan, place the beans with all the sauce ingredients, sausages and water to cover them. Bake in the oven at 200°C. (Raphael Kouroufexis, Cooking Cypriot food 2013-2014)
