Ingredients

Spring onions
Eggs
Lemon juice
Oil for frying
Salt, pepper

Method

Wash and coarsely chop the green part of the spring onions. Put them in a pan with the oil and fry them on a low heat. Remove excess oil and add lemon juice. Immediately add beaten eggs and season with salt and pepper. Stir to combine and serve.
