Baked chickpeas

A delicious syrupy dessert with filo pastry and almonds (or walnuts) filling.

Barley Bread

If a family had no wheat, it would use barley grains to make flour, which was then used to make bread.

Beans with kolokíthi (sweet marrow)

Glykokóloko (sweet marrow) blends nicely with boiled beans. Another common combination in Cypriot cuisine is with blackeyed beans (louvi).

The combination of pasta and legumes is not uncommon in Cypriot cuisine, and this recipe is a good example!

Beans with minced meat

A tasty dish that can be cooked either on the stove or in the oven. The minced meat and beans are cooked in a rich tomato sauce.

Beans with wild greens and sausage

The legumes, greens and sausage are cooked in a tomato and onion sauce. A recipe based on ingredients of the traditional Cypriot cuisine, combined in an original way.

A contemporary dish with complex combinations and familiar flavours of the Cypriot cuisine.

A dish which was rarely prepared in the old days, since meat was expensive. It was mainly served on festive occasions. The recipe comes from Aradippou in the Larnaca district.

Beetroot - fasting dish

Simple and quick recipe for fasting periods. Beetroot is cooked in water combined with fried onion.

Beetroot salad

The boiled beetroot is mixed with garlic, salt and olive oil and served with chopped parsley.

Black Olives

“…salt them and leave them in the basin. Stir them until the salt dissolves and they are ready” (Testimony of Panagiota Charalambous, Kyperounda).

Boiled mallows

Boiled mnouhari (large) snails

In Cyprus, very large snails with hard shells were called mnouhari. After boiling them in water, they were served with olive oil and lemon juice.

Bread (wheat)

Broad beans with chards (vegan)

Dried split broad beans (fava beans) with chards, a vegan’s favourite.

Cabbage soup

A type of vegetarian-fasting soup based on cabbage. When the cabbage is lightly fried with the onion in olive oil, rice is added and cooked in water.
