Glykokóloko (sweet marrow) blends nicely with boiled beans. Another common combination in Cypriot cuisine is with blackeyed beans (louvi).

Ingredients

1 glass of beans 
½ glass of sweet marrow, cut 
3 tbsp olive oil 
Lemon juice
A pinch of salt

Method

Wash the beans and soak them in water overnight. On the following day, drain the beans and add them in a pot. Add clean water to cover them. Boil them until they are half cooked. Drain them in the colander. Transfer the beans to the pot and add fresh water. Once they start boiling, add the chopped sweet marrow and continue boiling until done. Add salt and serve on a platter with olive oil and lemon juice. (Marianna Mina and Christina Peratikou, Kyperounda)
