Ingredients

1 glass of beans
2 bunches of green amaranth leaves
4 tbsp vinegar
5 glasses of water
6 tbsp oil
Salt

Method

Clean the green amaranth leaves, put them in hot water and drain them. Boil the beans and drain them. Place the beans and the green amaranth leaves in a pot. Add water, oil and salt and boil them. Serve with a drizzle of vinegar or a squeeze of lemon juice. (Haritos Haritou, 70 years old, Kyperounda)
