A type of vegetarian-fasting soup based on cabbage. When the cabbage is lightly fried with the onion in olive oil, rice is added and cooked in water.

Ingredients

2 cups chopped cabbage 
1 large onion, thinly sliced
1/4 cup olive oil
1/2 cup soup rice (glacé)
Juice of half a lemon
3 cups of water
Salt

Method

In a pot, add the olive oil, the cabbage and the onion and sauté over medium heat. Add the remaining ingredients, turn up the heat until the rice is cooked. (Stavroula Vorka, Kornos)
