Processing method

Psoumosouppa was made with pieces of stale bread. Women would boil stale bread and add fried onions (Kypri, Protopapa, 2003 p.271).

Nutritional Value and Importance in the Diet of Cypriots

Souppopsouma made use of stale bread. This soup was usually given to beggars (Kypri, Protopapa, 2003 p.271). 

In the village of Tsakkistra , housewives used to prepare psoumoúthkia or souppoúthkia, which was a similar preparation to psoumosouppa. For their preparation, women would fry pieces of bread and boil them in a broth which they would dilute with water (Kyprianou, 1970).
