Σούπα αβγολέμονο με ρύζι. Rice is added to boiled meat broth. When cooked, egg yolks are added, beaten with lemon juice. For a fluffier soup, egg whites are also added after being beaten separately. Salt and pepper are also added (Great Cypriot Encyclopaedia, vol. 3, entry αυκολέμονη,η, 70-71).

Ingredients

1 cup of rice
5 cups of previously boiled chicken or meat broth
2 eggs
1⁄3 cup of lemon juice
salt and pepper

Method

In a large pot, boil the broth and add the rice. Stir occasionally until the rice is cooked. Turn off the heat. In a small bowl beat the eggs well and add the lemon slowly, keep beating the mixture. Add salt and pepper to taste. Add a few spoonfuls of broth, one at a time, to the egg mixture stirring constantly. Add a glass of water to the rice mixture in the pot and then slowly pour the egg mixture back into the pot and stir constantly. Bring the pot back to the boil for 10 minutes. Serve the soup with boiled chicken (Ministry of Agriculture 2010, Cypriot traditional preparations, 15).

Festive Occasions

Egg and lemon soup is traditionally served on the night of Holy Saturday after returning home from the Resurrection Mass.
