A fasting dish. The greens are cooked in a mixture of fried onion in olive oil and toasted flour.

Βρούβες (ή άλλα άγρια χόρτα) γιαχνί με αλεύρι. Charlocks (wild mustard greens) with citrus juice.

Ingredients

Onion
Charlocks
Flour
Olive oil

Method

Chop and fry the onion with a little flour to toast it. Wash and strain the charlocks and add them to the mixture. Keep stirring until they are cooked and remove the mixture from the heat. (Katzi 2000)

Frying.

Comments

They used the same recipe for other greens such as wild chicory, petinous and zalatounes (Katzi 2000).
