Ingredients

Charlocks
Fennel 
Onion, cut crosswise
A small garlic
Olive oil
Salt
Pepper 
Juice of bitter orange and lemon 

Method

Wash and cut the lapsanes. Boil them with a little salt and drain them. Fry the onion and garlic and once they are golden brown, add the chopped fennel and stir for a while. Add the boiled lapsanes and stir to mix with the rest of the mixture. Then add the the bitter orange juice and lemon juice, salt and pepper and bring to a simmer over low heat. The dish is served hot or cold, with rusks and black olives. As the lapsanes cool down, they are even tastier. (Publication permission from: http://www.rizokarpason.com/ sintages1.htm)
