Lentil soup with trin

Before adding to the soup, half of the trin is lightly sautéed in olive oil until golden brown. Trin is a type of Cypriot homemade pasta.

Ingredients

1 cup of ground lentils
5 cups water
3/4 cup of trin
1/4 cup olive oil
Salt

Method

In a pot, boil the water and add the lentils to cook. Skim them off the foam that forms on top and add salt. When they are almost cooked, add half the trin and continue cooking. In a pan, heat the olive oil and add the rest of the trin. Stir until lightly browned. Add this to the pot with the lentils, bring to a boil 2-3 times and serve. (MANRE 2006, 13)

Supplementary information

The trin, i.e. thin strips of dough, were baked in milk and made into 'galotrin' (MANRE 2006, 19).
