Ingredients

2-3 pieces of chicken
7 red onions, cut in slices
5-6 peeled tomatoes, chopped or grated 
2 bay leaves
Salt, pepper, cinnamon
Oil
Water

Method

In a pot, put oil and fry the chicken. Remove the chicken and add the onions and fry them well. Remove some oil and add the tomatoes, to simmer for a while. Add the chicken, pepper, cinnamon, salt and bay leaf and stir. Add water and allow to simmer. (Elena Eleftheriou, Cooking Cypriot food 2013-2014)
