Ingredients

2 kg flour
1 kg semolina
3 sachets yeast
3 teaspoons ground mastic, mahleb, cinnamon, cloves
1 cup peanut oil
1 teaspoon heaped salt
1 cup sugar
4 cups lukewarm water
1 kg sesame seeds
1 teaspoon aniseed 
1 teaspoon nigella seeds sprinkled with water

Method

Mix the flour, semolina and yeast together. Add the oil and rub them with your fingertips. Then, bring them at one side of the bowl, making room to add the sugar, salt and water to dissolve the sugar and then knead them all together. Cut the dough into small pieces and sprinkle the spices on top. Knead them again and cut them into small pieces again and knead them again. Leave the dough to proof for 1/2 hour in a plastic bag and covered all over with a towel. Then cut a piece of the dough, roll it over the sesame seeds which have been placed on a towel and give it an oblong shape. Create Easter dolls, bags (baskets), a Lent figure and cross bread!
