Okra yahni with chicken

A dish combining okra and chicken, cooked in a rich tomato and onion sauce. The recipe comes from Pera Chorio Nissou, Nicosia district.

Ingredients

1 kg okra 
1 kg chicken
3 medium onions
3 ripe tomatoes
1 clove of garlic (optional)
Salt
Ground pepper

Method

Peel the okra, wash it and let it drain for a while. In a saucepan, fry the okra in hot oil for 10 minutes, until soft and remove. Add the chicken to the pan. Lower the heat and let it fry for 20 minutes. Chop the onion into rings and add it to the chicken along with the garlic clove (optional). Finely chop the tomato and add it to the pan with the onion and chicken. Add the okra, salt and pepper, and cover the pot with a lid. Let the food simmer for 45 minutes. It is ready to serve.
