Mushrooms, like various other greens and vegetables, are preserved in vinegar and served as an appetiser or as an accompaniment to other dishes.

Ingredients

Version A
Mushrooms
Coarse salt
White vinegar

Version B
1 kg of red mountain mushrooms
1 small bottle of vinegar
A little salt

Method

Version A 
Wash the mushrooms and place them in boiling water for 1-2 minutes. Then drain them, dry them well and add salt. Put them in glass jars and add the vinegar. (Evangelia Vorka, Kornos)

Version B 
Using a damp cloth, clean the mushrooms thoroughly and cut them into slices. In a pot, bring water to a boil. Add the mushrooms and leave them until cooked. When they are ready, place them in a colander and allow them to cool. Put the mushrooms in bottles and cover them with the vinegar. (Kyperounda)

Boiling in water.
Preserving in vinegar.
