The potatoes are lightly fried with onion, then cooked in tomato sauce.

Ingredients

1 kg potatoes
1/2 cup olive oil
2 onions, finely chopped
5-6 ripe tomatoes
Tomato sauce
Salt and pepper

Method

Peel and cut the potatoes into large cubes. Sauté the onions lightly in olive oil and add the potatoes. Stir the potatoes by shaking the pot a little. When they are lightly browned, add the tomatoes that have been grated. Add also the tomato sauce dissolved in a cup of water, salt and pepper and let them simmer over low heat. (MANRE 2006, 22)
