Peas with artichokes
A yahni dish with peas and artichokes that are fried and then cooked in tomato sauce.

1 kg peas
1 kg artichokes
1 onion
1 tomato juice
Olive oil
Salt
Clean and wash the peas and artichokes. Add lemon juice to the artichokes to prevent them from darkening. Sauté the onion lightly with the peas. Fry the artichokes and add them to the peas. Immediately add the tomato juice and salt. Cook on low heat to reduce. (Kyperounda, see Kourri and Lazarou 2007)
