The pork, zucchini and potatoes are sautéed separately, then cooked together in a tomato sauce. Recipe from Choirokoitia in Larnaca district.

Ingredients

5 small pieces of pork 
2 medium-sized potatoes
2 green zucchini
1 small onion
1 tomato juice
1 chicken stock cube
1 cinnamon stick
1 bay leaf
½ teaspoon salt
1 glass oil

Method

Cut the potatoes in half. Cut the zucchini into small pieces. Put the oil in the pan and, after it boils, brown the potatoes. Remove them from the pan and fry the zucchini. Once cooked, remove it from the pan and sauté the meat. Add the onion and let it brown. Add all the remaining ingredients and simmer over low heat until the sauce thickens.
