Φασόλια, τα οποία δεν έχουν αποξηρανθεί, βρασμένα. Fresh beans.
Ingredients
1/2 kilo of xekounia (fresh beans)
1-2 medium carrots
1-2 medium potatoes
1 tsp salt
1 litre of water
Olive oil
Lemon juice.
Method
Clean and wash the beans. DIce the potatoes (4cm) and the carrots into 2 cm discs. In a pot, bring the water to a boil, then add the beans, potatoes and carrots until cooked. Just before they are done, add the salt. Serve with lemon juice and olive oil. (Maria Lazarou, 73 years old, Pedoulas).
