Contemporary recipe with dry beans, which are boiled and pureed. The puree mixture is used to make croquettes, which are then wrapped in breadcrumbs and baked in the oven.

Κροκέτες φασολιών.

Ingredients

1½ glass beans
1 large onion, grated
1 tsp thyme
½ tsp nutmeg
2 tbsp olive oil
1 glass breadcrumbs

Method

Boil well the beans that you have soaked in water overnight. Mash the beans into a puree. Add the herbs, onion and oil and form small round balls. Press the balls lightly around the edges and sprinkle with breadcrumbs. Place them on a baking tray greased with oil and bake in the oven until golden brown. (MANRE 2008)
