Ingredients

2 glasses of kidney beans (boiled)
1 glass of sweetcorn
½ glass of sliced mushrooms
4 tbsp celery, chopped
4 tbsp onion
4 tbsp bell peppers, green chopped
3 tbsp olive oil
cumin
salt

Method

Clean and wash the beans and soak them overnight in plenty of water. On the following day, boil them and drain them. Put them in a salad bowl and add the sweetcorn, mushrooms, bell peppers, onion and celery. In a bowl, whisk the olive oil with the lemon juice, add the cumin, some salt and pour over the beans. Stir all the ingredients together and serve. (MANRE 2008)
