An extremely tasty and nutritious salad that combines legumes, vegetables and fish.

Ingredients

1 glass of boiled beans
2 medium grated carrots
3 tbsp fresh parsley, finely chopped 
3 tbsp onion, finely chopped
1 tin of tuna fish
5 black olives, finely chopped
2 tbsp olive oil
2 tbsp lemon juice

Method

Clean and wash the beans and put them in water overnight to soak. Boil them in plenty of water, which you change a couple of times, cool them and drain them. Put them in a glass container or salad bowl, add the grated carrot, drained tuna and chopped olives. In a bowl, whisk the oil with the lemon and add the parsley and onion. Pour the sauce over the beans. (MANRE 2008)
