Fasolia gigantes - Giant baked beans

These gigantes beans are first boiled for a while in water and then cooked in the oven with tomato juice, celery, parsley and onion.

Ingredients

1½ glass of gigantes beans (butter or runner beans
1 glass of celery, chopped
1 glass of onion, chopped
2-3 cloves of garlic, finely chopped 
½ glass of parsley or dill, finely chopped 
1½ glass of tomato juice
1/4 glass of olive oil
6-8 black peppercorns
A pinch of salt

Method

Soak the beans in water for 24 hours. Boil them in plenty of water until they are soft (change the water 1-2 times). Drain them and place them in an ovenproof dish and add all the ingredients except the salt. Add the juice from boiling the beans to cover them. Cover the ovenproof dish and bake in the oven for 1½-2 hours. In the last 10 minutes add the salt. (MANRE 2008)
