Green beans with dried beans and potatoes, cooked in a tomato sauce (yahni). This dish was made only every Holy Thursday. In the old days, people used to consume oil on Holy Thursday, which is why this dish contains olive oil.

Ingredients

2 potatoes
1 cup of dry beans
1/2kg fresh green beans
1 medium onion cut into thin slices
2 tbsp tomato paste
1/4 cup olive oil
1/2 tbsp salt

Method

In a pot, cook the beans. When they are half cooked, add the green beans. Then add the diced potato. Sauté the onion and add it to the pot along with the tomato paste. (Maroula Economidou, Pedoulas)

Comments

In the old days, as fresh green beans were not available throughout the year, dried green beans were used instead.
