After frying the potatoes with the skin on, they are cooked in water. The recipe comes from Kato Mylos in the Pitsilia district.

Ingredients

4 medium potatoes
1 ½ glass of olive oil
½ glass of water
Juice of one lemon
Salt

Method

Heat the olive oil. Wash and cut the potatoes into large cubes with the skin on, then salt them. Add them to the hot oil and brown them. Add the water and let them cook until they absorb the water and only the oil remains with the potatoes. Add the lemon juice and stir. In the final stage, the potatoes lose their shape a bit, and some potatoes may melt. (Myria Aresti, Cooking Cypriot food 2012-2013)
