Cypriot version of moussaka, which was made in the past. It was a simple dish, since it was made only with potatoes and minced meat, without béchamel. It was usually served at weddings. Today, some women still make this recipe.

Μουσακάς με πατάτες.

Ingredients

1 onion
3/4 glass of olive oil
½ kg minced meat
Salt
Pepper
Parsley
4-5 tomatoes
5-6 potatoes

Method

Finely chop the onion and sauté it in a pan, along with parsley, tomato (or tomato juice) and the salt, pepper, Cut the potatoes into slices. Fry the potatoes in plenty of olive oil. In a baking dish, layer some potatoes, top with the minced meat and then layer again with potatoes. Cook in the oven. (Raphaela Marangou, Cooking Cypriot food 2013-2014)
