The boiled potatoes are combined with parsley and spring onions, while the salad is flavoured with the classic oil and lemon juice. The recipe comes from Palechori in Nicosia district.

Ingredients

½ kilo of potatoes
1 fresh onion, finely chopped
Parsley, finely chopped
Lemon juice 
Olive oil 
Salt
Pepper (optional)

Method

Wash and boil the potatoes. When they have cooled down well, peel them and cut them into small cubes. Add the parsley and chopped onion and mix. Whisk the oil, lemon juice and salt in a bowl and pour over the salad. (Rigina Damianou, Cooking Cypriot food 2012-2013)
