Potatoes yahni with zucchini and fennel
Sauté the onion, celery and fennel lightly. Dissolve the tomato paste in a glass of water and pour it over the potatoes and zucchini. (Kyperounda)

1 kg medium potatoes
1 kg zucchini
1 cup of oil
1 onion
2 tbsp tomato paste
1 tsp salt
2 tbsp lemon juice

Cut the potatoes and zucchini in 2-3 pieces each. In a pot, bring the oil to a boil and sauté the potatoes and zucchini lightly. Add the onion, celery and fennel and sauté them lightly. Dissolve the tomato paste in a glass of water and pour it over the vegetables. Add enough water to cover them. When they start to boil, add the lemon and salt. Cover the pot and simmer over low heat.
