Ingredients

Pieces of karotzefala (dried goat's head)
Potatoes, cut in pieces
Tomato paste
Olive oil
Onion
Salt

Method

Sauté the onion with the olive oil. Then add the potatoes, the tomato paste, water and salt. Add karotzefala and let them boil until the potatoes are cooked. (Maroulla Economidou, 85 years old, Pedoulas)
