Pork with spinach yahni
Pork and spinach are sautéed and then cooked in tomato sauce. The recipe comes from the occupied Eftakomi in Karpasia (Famagusta district).

Κρέας με σπανάκι γιαχνί.
1 kg pork, cut into pieces
4 bunches spinach
1-2 onions, finely chopped
Tomato sauce (preferably prepared in the traditional way)
Olive oil for frying
Salt, pepper
Sauté the onion and the meat in olive oil. Sauté the spinach. Mix the ingredients and add the tomato sauce. Add water, salt and pepper. Cover the pot and cook over medium heat for 45-60 minutes until the sauce thickens. (Emmelia Paphiti, Cooking Cypriot food 2012-2013)
